Mint & Chilli Lamb Sausage Rolls with Tztatziki

This dish from our perennial favourite from Donna Hay It will become your new go-to when you want a tasty but quick solution. I have made this twice already! I made as a log but would be equally good as individual rolls served with your favourite Christmas cocktail.

Ingredients

  • 500gm Leelands lamb mince
  • ½ c panko crumbs
  • ¼ c mlik
  • 3 tsps dried mint ( I used fresh mint finely chopped )
  • 1 tsp finely grated lemon rind
  • ¼ chilli flakes
  • 1 tsp sea salt flakes
  • ½ tsp cracked pepper
  • 2 sheets of pre rolled puff pastry
  • 1 egg beaten
  • Store bought tzatziki,to serve

    Method

    Preheat oven to 200C.

    Combine panko and milk and stand for 5 mins.

    Combine lamb, mint, lemon, chilli, egg yolk, salt & pepper, the add panko mix.

    Join 2 sheets of pastry, pressing seam together. Place lamb mix down the middle and roll to enclose.

    Place seam side down on large baking tray lined with baking paper.

    Brush with beaten egg and sprinkle with a little sea salt.

    Bake for 25 mins or until pastry is puffed and golden and mince is cooked through.
